Carob-Banana Buckwheat Crackers

I have been experimenting a lot with buckwheat flour recently and decided to try to make crackers! I know that carob and bananas aren't candida friendly, but we've decided to take a break from the diet, just cause it's summer and we want some fruit! We will get back on it at some point in the near future...We just love fruit too much! A diet is no good if you are constantly stressing about it, so if you need to take a break, I say go for it!

Onto the treats...


3/4 cup buckwheat flour
1/4 cup dark roasted carob powder
1/2 tsp powdered stevia
2 tbsp almond oil
1/2 cup water
1 Organic Banana, thinly sliced

Combine all ingredients until it forms a ball of dough. Place dough between two sheets of parchment paper and roll until you can't roll it no more! ;) Just make sure it's very very thin. Place thinly sliced bananas on top. Score dough into crackers with a knife. Bake for 25 minutes on 400F.

I know it's weird...sweet crackers? But these were awesome and low-glycemic if I may add...

  1. these are so creative; i would definitely make them! do you find they are hard to roll out on parchment paper, or are they easy to get off? do you bake them on the parchment paper?

  2. Yup! just put the dough in between two sheets and roll it out and then peel off the top sheet and then bake it with the bottom sheet still attached on a baking sheet.

  3. Do you think foil might work to bake them on? Or a greased pan? I have no parchment paper :\

  4. @ jammed thoughts: I haven't tried that yet...do you have wax paper? That could work too...if not a greased pan should work fine.
